I disagree with you, Ma'am Sleepy.
I think the fattening yum yums of the darker cheese (Although I don't eat cheese but on the rare occasion I endulge in some mac and cheese) is the better option.
Although, now that I just reread your post,
Provolone is definately the shit if you're getting a Subway meatball sub, Yo.
