Does anyone know what is it? I searched for it on the internet but didn't find any helpful information. Is it like a portable OS or something?

Componentized System | Powered by Windows Embedded 7 | Windows Embedded Standard 7
From the site:
Developers use Windows Embedded Standard 7 to create a variety of smart, connected, and service-oriented advanced commercial or consumer devices. These devices run thousands of existing Windows applications and drivers, ranging from Thin Clients to Multi-Function Printers, including:
- Advanced Set-top Boxes
- Fuel Pumps
- Full Featured Point of Service
- Gaming Devices
- Home Automation Gateways
- Industrial Controls
- Intelligent Appliances
- Multimedia Internet Devices
- Kiosks
- Digital Signage
- Mobile Point of Service
- Monitoring Devices
- Multi-Function Printers
- Networked Media Devices
- Thin Clients
It'd be like the OS used on those photo lab kiosks at Walgreens (although most embedded Windows I've seen is XP). - Advanced Set-top Boxes

So should I install it one my laptop or does it not work?
Nah, that wouldn't be ideal. Embedded means it's meant for kiosks and point-of-sale machines (cash registers), vending machines, etc. Stuff that sits in one place and is used for one thing and one thing only, generally. So yeah I would just go for regular Home Premium or Professional -
Yeah, I have Windows 7 and Windows Vista.

Windows Embedded Standard is not meant to be used as a desktop operating system like Windows XP, Vista and 7.
It is only meant for a specific purpose.
Just stick with Vista and 7.
